3-Ingredient Blueberry Cheesecake Bagels (Gluten Free, Egg Free)

Meanwhile, the optional aquafaba "egg wash" and toppings create a nice, crunchy crust on each bagel top. Ingredients for Greek Yogurt Bagels
2/3 cup self-rising gluten free flour (or 2/3 cup all-purpose gluten free flour + 1 tsp baking powder)One 5.3 ounce container of Clover Sonoma Blueberry Whole Milk Greek Yogurt
Shake of cinnamon
Optional: enough aquafaba (the liquid in a chickpea can) to coat the bagels and help with browning
Optional toppings: extra cinnamon, chia seeds, acai powder
How to Make Your Gluten Free Bagels
Making these Greek Yogurt bagels is a pretty dang easy, and it all starts by preheating your oven to 350 degrees Fahrenheit. While your oven is heating up, pour your self-rising flour (or your gluten free all purpose flour and baking powder) into a bowl with a little cinnamon. Mix thoroughly, and then open a Clover Sonoma Blueberry Whole Milk Greek Yogurt (you can use another flavor instead, but for the blueberry cheesecake flavor, blueberry is ideal!). Clover's Greek Yogurt works perfectly for this recipe because Clover strains their yogurt in small batches, which makes it super thick and creamy - exactly what you need for bagels.Mix the yogurt thoroughly and then pour it into your dry mixture. After mixing your wet and dry ingredients together in the bowl a few times, your gluten free bagel dough should be crumbly and a little sticky.
Once you’ve incorporated all the ingredients, lightly flour a counter or baking mat and kneed your bagel dough until it holds together and is pliable without being overly sticky. I like my snacks on the smaller side, so I made mini gluten free bagels and separated my dough into seven roughly equal parts. For larger bagels, just use more dough for each. Whatever size you choose, you'll roll each section into a cylinder under your palm, and then shape them into circular bagels.
Next, lightly coat your bagels in aquafaba. You could also use egg wash, but aquafaba (or the liquid from a can of chickpeas) is an egg-free option that will give you the same browning effect. The final step to this gluten free bagel recipe is sprinkling on any of your optional toppings. I used chia seeds, extra cinnamon and açaí powder, but you can use whatever toppings are calling your name.
Line a baking tray with parchment paper (warning: these gluten free bagels get crunchy on the bottom and tend stick to whatever they're cooked on) and pop your bagels into the oven for around 24 minutes. Once they've cooked, you can give your bagels deliciously browned tops by moving your baking tray to the top oven rack and putting the oven on low broil for two minutes. Rotate the tray halfway through and be sure to keep your eye on the bagels while they broil. They will brown super quick!
How to Turn These Gluten Free Bagels Into the Ultimate Snack
After your gluten free bagels are done baking, you can dive right in! If you want the full blueberry cheesecake bagel experience, I’d recommend packing the following goodies in your lunch box: one or two of these homemade blueberry bagels, a handful of fresh or frozen berries and one Clover Sonoma Organic Cream on Top Blueberry Yogurt!
