Gluten Free Buckwheat Banana Bars (Vegan, Oil Free)

Lately I’ve been loving getting back to experimenting in the kitchen, and these gluten free buckwheat banana bars are one of my most recent successes.

Gluten Free Buckwheat Banana Bars (Vegan, Oil Free)

Think of these gluten free banana bars as banana bread with a twist. They are sweetened with ripe banana, applesauce and a little bit of coconut sugar, resulting in a subtly a sweet flavor and a super moist texture. Combined with buckwheat and coconut flour, these banana bars are higher in vegan protein and super fluffy.

Gluten Free Banana Bars Recipe Ingredients:

1 ripe banana, mashed
4 TBSP applesauce
1 chia egg (1 TBSP ground chia + 3 TBSP water)
1/4 cup buckwheat flour
1/4 cup + 1 TBSP coconut flour
2 tsp baking powder
3 tsp cinnamon
3 TBSP coconut sugar
2 TBSP water or plant-based milk
1 tsp vanilla extract
Handful of chocolate chips

How to Make Your Gluten Free Banana Bars:

First, preheat your oven to 350 degrees Fahrenheit and create your chia egg by mixing 1 TBSP of chia powder and 3 TBSP water. Let it sit for a few minutes and gel before adding the rest of the ingredients into the bowl, except the chocolate chips.

Mix thoroughly and then pour the batter (it will be rather thick) into a parchment-lined baking tray. I used a 9X9 inch cake pan! Add a sprinkle of chocolate chips (or more than a sprinkle - you do you - on top).

Then pop your banana bars in the oven and cook for about 20 minutes or until a toothpick comes out clean.  Let it cool (If you can resist!) before slicing into bars.

These vegan banana bars honestly blew me away in terms of their sweet flavor and fluffy, cake-like texture. Because it’s a sweet bite without tasting sugary, I love enjoying these banana bars for breakfast or as an afternoon snack.

Unsurprisingly, they’re also delicious with smoothies, yogurt, fruit and nut butter.
