Super Easy Gluten Free and Vegan Brownie Cookies

These gluten free brownie cookies only call for eight simple ingredients you probably already have in your pantry, and 10 minutes to bake. Plus, there are only two tablespoons of sugar in the whole batch, and this brownie cookies recipe results in a super chocolatey cookie with a dense and chewy texture.

1/4 cup all-purpose gluten free flour + 2 tbsp (I used King Arthur’s GF Measure-for-Measure flour)
1/4 cup cacao powder
1/4 tsp baking powder
3 TBSP applesauce
2 TBSP maple syrup (or date syrup)
1 tsp vanilla extract
3 TBSP water/milk + 1 TBSP if needed
Handful of chocolate chips
First, preheat the oven to 350 degrees Fahrenheit. Then mix all of the dry ingredients except the chocolate chips, followed by the wet ingredients, adding the extra tablespoon of liquid if the batter is too thick.
Then scoop tablespoon-sized balls of batter onto a lined baking sheet, and press a few chocolate chips (or more - you do you!) into each. Then pop your brownie cookies in the oven for around 10 minutes!
As a chocoholic since birth, these gluten free brownie cookies aren’t the decadent, sugary brownies you’d find at a traditional bakery (gluten free or otherwise). But they are the perfect chocolatey bite if you want a slightly sweet treat with a dense, fudgy texture.
