KNOXVILLE, Tenn. — Berry Good Cake Jes writes: Sometimes you just want some good cake but in the summer, frosted cakes can seem heavy. This light cake is loaded with summer berries and will hit the sweet spot! Ingredients 1 stick plus 2 T of butter, softened Directions Preheat the oven to 350 degrees. Cut a piece of parchment paper to fit the 9-inch cake pan. Spray the sides and bottom and then sprinkle with 2 tablespoon sugar. Swirl the pan around to coat, then tap out any excess. Use an electric mixer to beat butter with 1 cup sugar until light and fluffy. Add the eggs and almond extract, then continue beating until well combined. Add salt, baking powder, ground cardamom and flour and mix until just combined. Mix in sour cream, then use a spatula to fold in the strawberries and blueberries. Transfer batter to the prepared cake pan and smooth out the top. Sprinkle the turbinado sugar on top evenly. Bake for about 40 minutes or until a toothpick inserted into the center comes out clean. Take out of oven and run a knife around the edge to release. Allow the cake to cool completely. For presentation, flip the cake onto a plate, then flip back onto your serving place. If desired, sprinkle a light coating of powdered sugar. Great by itself or whipped cream. Makes 8-10 servings. |

Now, I know you came here looking for Triple Chocolate Mousse Cake, and I'm going to give you that. But bear with me a second. My affinity for Duke's Mayonnaise has never been a secret, whether it's generously slathered on an egg sandwich, mixed into my favorite ranch dressing or serving as the secret ingredient to my Mom's mashed potatoes. There's just something about its markedly tangy flavor, creamy texture and complete lack of sweetness that makes it perfect for my taste. So why are we talking about mayo on a post about chocolate cake? Well, because this chocolate cake is made with mayo. And it comes to us via the brand new Duke's Mayonnaise Cookbook, created by author, recipe developer and food stylist Ashley Strickland Freeman. Things like Nashville Hot Chicken and Buttermilk Cornbread Waffles, Coconut Cream Meringue Tart with Macadamia Nut Crust, Rosemary-Dijon Pork Chops and Green Tomato Pie all caught my eye. But there was just something about this Triple Chocolate Mousse Cake that called out to me. Now if you know about mayo in cakes, you know that it makes them moist and super delicious. If you don't know about mayo in cakes, you're probably saying… "What!?!" Well, think about it for a second. Mayo is the perfect blend of eggs and oil – both of which are ingredients frequently called for in cakes. And most cake recipe instructions call for you to cream the fat (either butter or oil) and eggs together – creating an emulsion. Mayo is an emulsion, so it already has that done for us. Acid, the other ingredient in mayo, usually in the form of vinegar, helps to enhance the chocolate flavor. That's why we most often see chocolate as the flavor in mayo-based cakes. Using mayo in cakes is an old trick. In fact, some refer to these as World War II cakes or Depression cakes because during those times, baking ingredients were hard to come by and ingenious bakers had to get creative. Regardless, this cake has all the great flavor of that classic recipe, but then it's amped up with a fluffy mousse filling (my favorite part) and a ganache frosting. Now Ashley explains in her recipe that the ganache frosting can be used as-is or can be whipped with a mixer to make it a bit lighter. I opted to do that and was pleased with the results. Ashley's head note to this recipe says that this cake is "the ultimate cake for chocoholics." And I definitely agree. It's filled with deep, rich, dark chocolate flavor. If you like your chocolate a little sweeter, Ashley recommends using semisweet or milk chocolate rather than the bittersweet chocolate called for in the recipe. This recipe is a bit more detailed and takes a little more time than most recipes I share, but the extra effort is absolutely worth it.
